Easter Eggs in a Nest

Here's a quick and easy treat to make for your kiddo's Easter baskets. Seriously they only take about 20 minutes to whip up.  So easy that you may want to let your kids help the old Easter Bunny out and make these tasty treats with you!

I have two varieties for you to try:



Peanut Butter Chocolate Eggs in A Nest

1 cup Guittard milk chocolate chips (The only brand of chocolate chips I will use... my absolute favorite.)
1/2 cup creamy peanut butter
6 oz package China Boy Rice Noodles (Rice noodle are thinner, lighter and more tasty than Chow Mein Noodles

Melt chocolate chips and peanut butter in the microwave (heat for a minute, then stir. If there are still lumps heat for 10 seconds longer and stir again. Continue this until just melted and smooth.)

Stir in the rice noodles, carefully, until the noodles are coated. Try not to break the noodles.

Spoon onto wax paper or non-stick aluminum foil lined cookie sheet. Build up the edges slightly to make a dent in the middle for the eggs.

Garnish with candy eggs.

Chill in the refrigerator until set.
Makes 9 nests.


Chocolate Fudge Eggs in a Nest 
1/3 cup milk chocolate chips
1/3 cup semi-sweet chocolate chips
1/4 cup butter
3 T corn syrup
About 2-3 cups Shredded Wheat (not sugar coated)

Crush the shredded wheat and set aside.

Melt chocolate chips, butter and syrup in microwave. 

Stir the shredded wheat carefully into the chocolate mixture.

Spoon onto wax paper or non-stick aluminum foil lined cookie sheet. Make a small dent in the center for the eggs.

Garnish with candy eggs.
Chill in the refrigerator until set.
Makes 9 nests.

Place each nest in a cellophane bag and tie with a bow for the Easter Bunny to add to the baskets.

I love the taste of the Peanut Butter Chocolate more than I do the Chocolate Fudge.  But I like the texture of the shredded wheat more than the rice noodles. But then I really like the looks of the rice noodle nests best. Decisions, decisions... next time I make them I may just mix it up a bit. I'd love for you to share your opinion!
