Peanut Butter Popcorn

If you like peanut butter,
then you'll ♥ Peanut Butter Popcorn.

This has been a favorite recipe of mine for a bazillion years or more...
and I'm not really a peanut butter fan.

I remember how my kids always loved this for a
Family Home Evening snack.

It's lip smacking, finger licking good.

1/2 cup unpopped popcorn  (1/2 cup unpopped popcorn = 3 qts popped)
1/2 cup honey
1/2 cup corn syrup
1 cup sugar
1 cup peanut butter
1 teaspoon vanilla

Pop the corn and remove any unpopped kernels.

Butter sides of a heavy saucepan.

Combine honey, corn syrup and sugar in the saucepan.  Bring to boil, stirring continuously.
Boil hard for 2 minutes (no longer) as you stir.
Remove from heat.

Stir in peanut butter and vanilla.  Immediately pour over popcorn. Stir to coat well.
Spread out on a clean surface to cool.

At this point you may wish to make popcorn balls by coating your fingers in butter and pressing a handful of popcorn lightly into a ball.  A great way to limit the portion, otherwise it will all disappear in minutes.

Caramel Popcorn

Sometimes life throws you a curve ball that takes awhile to get over. This blog has been the victim. With my mother's passing in July, I haven't felt much like posting here... hugs to a few of my sweet daughters who carried on a bit. For the most part, I think we all needed a break. But today I felt like posting a recipe... and so here we go... (BTW, thanks for the hundreds of you who have kept checking in to see if there was something new... don't give up on us!)

My mother loved popcorn...
she always enjoyed snuggling up to a big bowl of popcorn and a good movie.
This post is for you, Mom.♥

Vicki's Caramel Popcorn
Years ago, too many to count, a dear friend gave me this recipe.
It's one of my favorites, although I must admit,
I have several favorite varieties that maybe someday I'll post.
We've always called this one Vicki's recipe.
This is the one we go to when we want a chewy buttery taste that has far too many calories to count.
Maybe we should rename it the Caramel Corn Diet Buster,
but it's so delicious, we don't even care!

 Enjoy!

1 can sweetened condensed milk
1 cup Karo Syrup
2 cups brown sugar
1/2 lb. butter (that is not a typo, maybe it would sound like less if I said 2 cubes.)

Heat butter, sugar and karo syrup. Bring to a slow rolling boil.
While stirring, add the milk.
Continue to stir and cook to *softball stage.
*(Place a drop in a small bowl of cold water. If it will form into a soft ball in your fingers, it's done!)

Pour into a very large bowl filled with popcorn (6 Quarts.) Stir until popcorn is well coated.

Wait until caramel has cooled before eating. Of course, we never do, who can wait to eat this temptingly delicious treat? But if you'd rather not have sticky fingers, wait.  I think it's easier to eat the next morning when it's cool.

Grandma's Pink Popcorn

Here's a SUMMER treat your kiddos are sure to love!

Pink Popcorn!

A recipe that's been in our Family for over 50 years...

I remember as a small child my Mother serving this tasty treat at my Great Grandmother's 80th Birthday party in a big orange plastic tub. Never had I seen so much popcorn before, and never ever PINK POPCORN. That was so many years ago and since then, I've made it for my own kiddos and now for my grandkids.

We let the kids decorate the popcorn bags while we make the popcorn. Then we fill each bag with yummy goodness and serve it outside at our backyard movie shown on the side of our house. It's become a favorite SUMMER FAMILY TRADITION.

Grandma's Pink Popcorn

2 cups sugar
2/3 cups half and half (or milk)
1Tablespoon Karo Syrup
1/4 tsp. salt
1 tsp. vanilla flavoring
red food color
6 quarts popped popcorn

In a saucepan, mix the sugar, milk, karo syrup, and salt.

Heat mixture until slightly firm (230° F with candy thermometer or use cold water method: spoon a drop or two of the cooked mixture into a cup with cold water. When you can form it into a slightly firm ball, it's ready!)

Remove from the heat and add the vanilla and food color.

Stir, then slowly pour over the popcorn.
Transfer to large sheet pans and allow to cool.

Bag it up and you're all set to watch a movie!

                                           ENJOY!
