Caramel Popcorn

Sometimes life throws you a curve ball that takes awhile to get over. This blog has been the victim. With my mother's passing in July, I haven't felt much like posting here... hugs to a few of my sweet daughters who carried on a bit. For the most part, I think we all needed a break. But today I felt like posting a recipe... and so here we go... (BTW, thanks for the hundreds of you who have kept checking in to see if there was something new... don't give up on us!)

she always enjoyed snuggling up to a big bowl of popcorn and a good movie.

Vicki's Caramel Popcorn
Years ago, too many to count, a dear friend gave me this recipe.  
It's one of my favorites, although I must admit, 
I have several favorite varieties that maybe someday I'll post.  
We've always called this one Vicki's recipe.  
This is the one we go to when we want a chewy buttery taste that has far too many calories to count. 
Maybe we should rename it the Caramel Corn Diet Buster, 
but it's so delicious, we don't even care!

1 can sweetened condensed milk
1 cup Karo Syrup
2 cups brown sugar
1/2 lb. butter (that is not a typo, maybe it would sound like less if I said 2 cubes.)

Heat butter, sugar and karo syrup. Bring to a slow rolling boil.
While stirring, add the milk.
Continue to stir and cook to *softball stage.
*(Place a drop in a small bowl of cold water. If it will form into a soft ball in your fingers, it's done!)

Pour into a very large bowl filled with popcorn (6 Quarts.) Stir until popcorn is well coated.

Wait until caramel has cooled before eating. Of course, we never do, who can wait to eat this temptingly delicious treat? But if you'd rather not have sticky fingers, wait.  I think it's easier to eat the next morning when it's cool.

  1. oops I think I put on a few pounds just reading the recipe :) Sorry about your mom, but isn't it wonderful to be able to remember them in recipes and other things they did with us? memories are blessings...

  3. I always think of Sunday evenings growing up at home when I have caramel popcorn. Although it just isn't the same without brothers and sisters to fight over the leftover caramel bits in the bowl. :)
