"Costa Vida" Chicken

I found this recipe once upon a time for a copy cat Costa Vida
(or maybe it was Cafe Rio) Chicken recipe.  
Not really sure how similar it is to the restaurant 
because I always get the steak, 
but we like it a lot, especially the simplicity of it. 


"Costa Vida" Chicken
5 Chicken Breasts(I use frozen breasts)
1 16 oz bottle of Zesty Italian Dressing
1Tbsp Chili Powder
1Tbsp Cumin
3 Garlic Cloves minced

Place Chicken Breasts in Crock pot. Combine wet ingredients and pour over Chicken Breasts.  Cook on low 4 hours.  Shred Chicken and cook on low for 1 more hour.

Serve on tortillas, nachos, salad, rice, whatever your creative mind can think of.  This makes quite a bit, two meals worth at least.  I always freeze half of it for another day and still have leftovers, but we are a small family of  2 and a half.



Our favorite way to eat this chicken is on tortillas(Costco uncooked) with sour cream, cheese, Mexican lime rice, black beans, lettuce, and tomatoes.
