My absolute favorite Chicken Tortilla Soup recipe comes from my friend Marci, with a few of my own variations. This soup takes just under 20 minutes to put together, I usually prepare it in advance and let it simmer on the stove until dinner. It's also a quick and easy meal to deliver and easily adaptable to suit any taste. It yields about 10 cups - each one has around 220 calories (does not include the toppings.) Healthy and delicious!

5-6 chicken tenderloins
1/2 c. finely diced onion
2 garlic cloves
(I cook the above 3 ingredients first, seasoned with Mrs. Dash or Zesty Italian Dressing. Then I add them to the ingredients below.)
2 t. ground cumin
1/4 t. salt
1 1/2 t. chili powder
1/4 t. ground pepper
1/4 t. red pepper flakes
(I use "heaping" teaspoons when measuring the spices and add more to taste if needed)

1 (14 ½ oz.) can chicken broth (may need more if you simmer during the day)
1 (15 ¼ oz.) can corn kernels (do NOT drain)
1 (15 oz.) can black beans (rinse and drain)
1 (14 ½ oz.) can Mexican-style stewed tomatoes (cut up)
1 c cooked rice
Toppings:
crushed tortilla strips or Frito chips
fresh cilantro
diced avocado
sour cream
diced avocado
sour cream
cheese
This recipe is the greatest! Since Camille shared it with me I have made it dozens of times. The things I like best about this recipe: I usually have most or all of the ingredients without going to the store, everyone in the family loves it and can personalize it to their liking with the toppings, and it feeds a lot of people without any mess--spoken like a true Grandma with plenty of Grandies!!! Making this right now Camille! I remember when you brought it to the lodge over Christmas break two years ago, it was delicious! Hoping I can do it justice..bummed I don't have any tortilla strips though!
