Beef Stir Fry

I found some strips of beef for a good price at the store the other day. I planned on making stew with them, but when it came down to it, I'm really not a stew kind of gal. So I opted for a Beef Stir Fry instead.

The original recipe I found was called Beef and Broccoli Stir Fry, but I added more than just Broccoli and adapted it to what ingredients I had. (Recipe adapted from Food.com)



BEEF STIR FRY
Prep Time: 20 minutes
Serves: 4



3 tablespoons cornstarch, divided

1/2 cup water

2 tablespoons vegetable oil, divided

1/2 teaspoon garlic powder

1 lb steak cut into strips

 5 cups of vegetables(approximately). I used Broccoli, carrots, and asparagus. You might also try cauliflower, water chestnuts, mushrooms, onion, etc.

1/3 cup soy sauce

2 tablespoons brown sugar

1 teaspoon paprika


First Combine 2 tablespoons cornstarch, 2 tablespoons water, and garlic powder until smooth. Add the beef and stir to coat.


Next In a large skillet (I used a wok) over medium high heat, stir fry beef with 1 tablespoon of vegetable oil (be careful not to overcook or it will become tough). Remove from pan.

Next
Stir-fry broccoli and any other vegetables you'd like to add in remaining oil until tender, or about 5 minutes.

Next
Combine soy sauce, brown sugar, paprika, 1 tablespoon of cornstarch and 1/2 cup of water until smooth; add to the pan.

Last
Return beef to pan and stir-fry for 2 minutes.


Serve over rice.
