Fig and Brie Bruschetta

 Heaven on a platter! *assembly required

These Hors d'oeuvres are perfect for entertaining or even a little snack.  Postino Winecafe http://www.postinowinecafe.com/  is a restaurant in Phoenix that I absolutely LOVE! They have delicious bruschetta, panninis, salads, and wine. I fancy every bit of it but the the wine. My hubby got to be a part of the postino experience on my birthday. It was his first and his last visit. He called it 'chick food.' I guess he is more of a meat and potatoes kind of guy. So I now only go with girlfriends... which is perfectly fine because I am always down for a girls night out! I went out Friday night with the girls and had platter of various bruschetta but have been craving this particular one ever since.

WHAT YOU NEED:
Olive Oil
Fig Spread
Brie Cheese
Granny Smith Apples
Bread- I used a baguette here, but you can use an Italian loaf, artisan bread or even ciabatta. Whatever you fancy!

DIRECTIONS- (It's not rocket science)

1. Preheat oven to 400°. Slice your bread. I like thinner slices, like 1/2 an inch slice because they are easier to eat. Brush olive oil on both sides of the bread and toast for about 3-4 minutes on each side.
2. Pull out bread and put thin slices of brie on top. Put back in the oven for 2-3 minutes, just enough time for the cheese to melt a bit. 
3. Pull out and spread the cheese out a bit. Spread fig spread on top of cheese. Top with thin slices of granny smith apples and enjoy a little piece of Heaven!


The fig spread can be made from scratch if you really want to complicate things!
I like things fresh so I'm sure it would taste better!
Or you can be lazy like myself and buy this cute little jar of Dalmatia Fig Spread.


Either way I'm sure your results will be Divine!

  2. Tried it, loved it. This whole experience opened my eyes to the world of different cheese and fig spread, I never knew what I was missing! :)
