I'll admit I had never even heard of Mascarpone cheese before trying this recipe - I've been missing out! Mascarpone is an Italian triple cream cheese made from creme fraiche. It is incredible. I whipped up these cupcakes for a local youth group a few weeks ago and it was a huge success.
Cupcake:
Prepare a white or yellow cake mix with directions on box. After mixing, add 1 tsp. of vanilla and 1 tsp. of almond extract. Then add a little lemon juice. Bake as directed.
Frosting:
1 pint heavy whipping cream
1 tub of mascarpone cheese (use at room temp)
1 tsp vanilla extract
1 cup of powdered sugar (more or less until desired taste)
1-2 cartons of fresh raspberries (save a few to garnish on the top if desired)

This recipe looks delish! I can't wait to try it. I've never used Mascarpone before. Didn't even know what it was. So I googled it. This is what I found:

I tried Walmart - but they didn't have it so I went the Harmons and they had it in their round fresh cheese section.
