Raspberry Mascarpone Cupcake

I'll admit I had never even heard of Mascarpone cheese before trying this recipe - I've been missing out! Mascarpone is an Italian triple cream cheese made from creme fraiche. It is incredible. I whipped up these cupcakes for a local youth group a few weeks ago and it was a huge success.




Cupcake:
Prepare a white or yellow cake mix with directions on box. After mixing, add 1 tsp. of vanilla and 1 tsp. of almond extract. Then add a little lemon juice. Bake as directed.

Frosting:
1 pint heavy whipping cream
1 tub of mascarpone cheese (use at room temp)
1 tsp vanilla extract
1 cup of powdered sugar (more or less until desired taste)
1-2 cartons of fresh raspberries (save a few to garnish on the top if desired)


Directions: Whip the whipping cream and the softened cream cheese together and slowy mix in the powdered sugar. It will be done when the whipped cream stands in peaks. (If it is lumpy your cream cheese was too cold.) Add red food coloring to make the desired pink color. Fold in raspberries.

  1. This recipe looks delish! I can't wait to try it. I've never used Mascarpone before. Didn't even know what it was. So I googled it. This is what I found:
    "Mascarpone is one of the foods that make the food police quiver and stop dead in their tracks. It is a fresh, very rich cow’s milk cheese — double or triple cream (60% to 75% milk fat) — that is sold in teensy little containers in this country." Oooh that sounds really good.

  2. I tried Walmart - but they didn't have it so I went the Harmons and they had it in their round fresh cheese section.
