Sometimes I'm in the mood for chocolate and caramel.
These cookies usually do the trick.
They are one of my favorites.

3/4 C cocoa
1 tsp baking soda
1/2 C chopped pecans
1 C sugar
1 C brown sugar
1 C butter
2 tsp vanilla
2 eggs
Topping:
1/2 C Chopped pecans
1 tsp Sugar
1/2 C Chopped pecans
1 tsp Sugar
In large bowl cream butter. Beat in both sugars until fluffy. Add vanilla and eggs and beat well. Add flour, cocoa, and baking soda. Stir in pecans.
Scoop out a spoonful of dough at a time and shape it around one Rolo candy, covering it completely.
In another bowl, combine the two topping ingredients. Press one side of each ball of dough into topping mixture and place topping side up on an ungreased cookie sheet.
Bake at 350 for about 15 minutes.
Make sure you don't over-bake. I usually take them out when they still look a tiny bit doughy and let them sit on the pan for a few more minutes.

Up next at Our Sweet Lemons... KellyAnne's Hummus... oh so good!
These cookies are so delish they will surely satisfy any cravings. But I think I could always be in the mood for chocolate and caramel.
